Product Introduction

Hazelnut Powder — Natural Nut Ingredient for Food, Nutrition & Confectionery Formulations

Hazelnut Powder from Kingherbs is produced from the kernels of Corylus heterophylla Fisch through air drying and precision milling, resulting in a fine, light yellow powder. With lipid content typically between 55–62%, moisture controlled at ≤5–6%, and particle size ranging from 0.8 mm to 2 mm depending on mesh grade, it carries an authentic nutty character — including the naturally occurring Filbertone flavor compound — without added maltodextrin, anti-caking agents, or artificial additives.

Hazelnut Powder

What Is Hazelnut Powder?

Hazelnut Powder is only made of one thing: ground up 100% Corylus heterophylla Fisch nuts that are the same size all over so they can be used in many food and nutrition situations. Smaller mesh sizes make finished products less gritty than coarse nut meal. This means they can be used for smooth-textured projects like candy fillings and spreads that have been blended.

Since it doesn't have any wheat or grain in it, it is naturally gluten-free and can be used with celiac-friendly, ketogenic, and paleo diets. When compared to more fatty nut flours, the relatively high oleic acid level helps keep the flour stable over time. The shell itself also contains natural Vitamin E (α-tocopherol).

When used as a partial wheat flour replacement — typically at 25–50% substitution — it can contribute moisture retention and caloric density. Full 100% substitution requires alternative binders such as eggs or xanthan gum to compensate for the absence of gluten structure.

Nutritional & Functional Profile

Hazelnut seeds are a good source of fiber, Vitamin E, B vitamins, folate, and minerals such as iron, manganese, and copper. It can be used to make clean-label functional foods and nutrition bars because of these traits.

The low moisture content (≤5–6%) limits microbial activity and reduces clumping tendency during processing and storage. The PV threshold of <10 meq O₂/kg and FFA limit of <1% at time of manufacture reflect the oxidative quality standard applied at production.

The Filbertone flavor compound occurs naturally in hazelnut kernels and contributes the characteristic roasted nut note to the powder — no flavoring agents are added.

Applications

Bakery & Patisserie

Bread, cakes, cookies, and muffins are all made with this powder. The oil in this ingredient keeps baked goods soft and moist. You can also coat fried or baked proteins with it instead of breadcrumbs.

Confectionery Fillings & Spreads

Hazelnut Powder's the smaller grains that help carry the taste and give the filling for gianduja and chocolate wafers. Finer mesh helps fillings with a smooth texture be less gritty.

Functional Nutrition & Keto Bars

Because it has a low glycemic index, it can be used to make protein bars and shakes that are high in fat and low in carbs. Plant-protein blends can taste and feel more even if you add the natural flavor of roasted nuts to them.

Breakfast & Beverage Applications

You can make hot cereal, oatmeal, or nut milk taste better and be better for you by adding the powder to them. It can also be used in place of pine nuts in some spicy recipes, like pesto.

Formulation Notes

  • Wheat flour replacement: Typically 25–50% substitution. Full replacement requires recipe reformulation with alternative binders.
  • Grind caution: Prolonged or high-heat milling will cause the oil to release and the product to become paste. Do not over-process.
  • Storage: Store in vacuum-sealed, light-proof packaging below 10°C. For extended industrial storage, freezing is recommended to slow lipase activity.
  • Allergen status: Tree nut allergen — label accordingly for finished products.

FAQ

Q1. Is powder naturally free of gluten?

Yes. Since it is made from only nut kernels and no wheat or grains, it can be used in gluten-free and celiac-friendly recipes.

Q2: What is the difference between powder and hazelnut meal?

Powder typically refers to a finer grind from blanched, skinless kernels and is suited to smooth applications such as macarons and fillings. Meal may include the skin and has a coarser texture, giving a more rustic appearance suitable for crumbles or granola.

Q3: Can it replace wheat flour at a 1:1 ratio?

No. Due to the absence of gluten, direct 1:1 substitution is not recommended. It is typically used to replace 25–50% of wheat flour, or 100% only in recipes specifically formulated with binding agents such as eggs or xanthan gum.

Q4: What are the storage and handling requirements?

Store in vacuum-sealed, light-proof packaging below 10°C. For long-term bulk storage, freezing is recommended to slow lipase enzyme activity. PV should remain below 10 meq O₂/kg and FFA below 1% at time of manufacture.

Q5: What documentation is available?

A full COA is supplied with each batch. Additional documentation such as allergen statements or certification copies is available upon request.
